This week we will start with a Breakfast recipe which you can carry through the day for different meals.

 

EGGS

 

An egg omelet, whether it be plain or with cheese, can start the day with a healthy breakfast.  It can, also, be made with egg substitutes, and be just as delicious.

 

For a single omelet, scramble up two eggs, add some salt and pepper, how about some spices, your favorites, oregano, basil or rosemary.  Try them all out.  

Using our Pinnacle 10" frying pan, add a TBSP of butter or margarine, (you've already turned on the heat), crack two eggs in a bowl, scramble them up,  and add them to the frying pan, be sure that it reaches all around the inside of the pan to the edges, when almost cooked, add some mozzarella cheese, or mild cheddar cheese, till melted then fold your omelet in half and place on your dish, add two slices of your favorite toast and bam, your favorite breakfast completed.

 

Let's do something different with that omelet,  MAKE A CREPE,  Strawberry Preserves with Whipped Cream Topping for two. 

CREPE RECIPE:  Take 3 eggs in a small bowl, Add 3/4 cup flour, 1/2 cup milk and 1/2 tsp. salt.  Scramble together.  It's more like a pancake mix now,  (For dieters or diabetics, use 3 substitute eggs, low fat milk, try it with rice flour, or use 1/4 cup less flour.)

Pour a thin layer in our Pinnacle 8" Frying Pan, heated of course, and swirl the pan to make sure it reaches the edges and is thin, they cook really fast, (they look a little darker or slightly brown when cooked. They are cooked really as soon as the mixture is dry.) take out and make sure that when you place them on a dish, you put waxed paper in between them otherwise they stick to each other.   Take one on a place, using a spatula or knife, spread some strawberry jam or preserves on it and fold.  Add whip cream topping and a dob of jam, sprinkle with powdered sugar and you have a meal or dessert. 

You can also make your own manicotti with this same recipe.   Mix 1 small container of ricotta, 2 eggs, parsley and grated parmesan or asiago cheese, salt and pepper to taste, stir it all together and spread that on the crepes, fold both sides over and you now have a homemade manicotti. 

FOR A GREAT SUPPER, HAVE A GREEN PEPPER OMELET or SPANISH OMELET or WESTERN OMELET, or a empty refrigerator leftover omelet.  Add your own ingredients and make them your own special omelets.  Don't forget to add your favorite crepe omelet dessert.
